Caramelized Onion Whipped Feta Dip
Sweet caramelized onions are folded into a creamy, tangy whipped feta spread for an easy yet elegant appetizer.
Ingredients
- 1 tbsp unsalted butter 14 g
- 1 medium yellow onion thinly sliced
- 8 oz block feta cheese crumbled, 225 g
- 1/2 cup heavy cream 120 ml
- 1/4 cup extra virgin olive oil plus more for drizzling, 60 ml
- 1 tbsp honey 15 ml
- 1/4 tsp black pepper freshly ground
Instructions
- Melt the butter in a medium skillet over low-medium heat. Add the sliced onions and cook, stirring occasionally, for 20 to 25 minutes. The onions should be deeply golden, soft, and sweet.
- Once caramelized, remove the skillet from the heat and set aside to cool for a few minutes.
- While the onions cool, add the crumbled feta, heavy cream, olive oil, honey, and black pepper to the bowl of a food processor.
- Pulse the mixture a few times to break down the feta, then process for 1 to 2 minutes until it becomes smooth and creamy.
- Reserve about two tablespoons of the caramelized onions for garnish. Add the rest of the onions to the food processor.
- Blend again for about 30 seconds, or until the onions are well incorporated into the feta mixture.
- Transfer the whipped feta dip to a serving bowl. Create a swirl on top with the back of a spoon.
- Garnish with the reserved caramelized onions and a final drizzle of extra virgin olive oil before serving.
Notes
For the creamiest texture, use a block of feta packed in brine rather than pre-crumbled feta.
Patience is key for caramelizing onions. Keep the heat low to prevent them from burning before they become sweet.
The dip can be served immediately while slightly warm, or chilled for 30 minutes for a firmer consistency.
If the dip seems too thick, you can add another tablespoon of heavy cream or olive oil and blend again.
