Portuguese Bitoque

Bitoque is a classic dish served in Portuguese cafes and tascas. At its heart, it’s a simple and satisfying meal: a tender steak, a savory pan sauce, and a perfectly fried egg with a runny yolk.

This entire meal comes together in under 30 minutes, making it a great choice for a weeknight dinner. The magic happens right in the skillet, where the browned bits from the steak become the foundation for a rich garlic and white wine sauce.

Why You’ll Love Portuguese Bitoque

  • Quick Sear: Cooking the steak over medium-high heat gives it a flavorful, browned crust while keeping the inside tender and juicy.
  • Pan Sauce: Deglazing the pan with wine is key. This technique lifts all the flavorful caramelized bits from the bottom of the pan and incorporates them into the sauce.
  • Butter Emulsion: Adding cold butter to the warm wine reduction while off the heat allows it to melt slowly and create a stable, creamy sauce.

Portuguese Bitoque Ingredients

  • Beef Steak: Sirloin is a great choice for its balance of flavor and tenderness. Thinly cut New York strip or rump steak also work well.
  • Dry White Wine: Use a crisp, dry white wine like Sauvignon Blanc or Pinot Grigio. Avoid anything labeled “cooking wine,” which often contains added salt.
  • Garlic: Crushing fresh garlic cloves with the flat side of a knife helps release their essential oils for maximum flavor in the steak rub and sauce.
  • Butter: Use cold, unsalted butter. Its cold temperature is important for helping it emulsify into the sauce smoothly instead of just melting into a greasy layer.

Exact quantities are in the recipe card below.

How to Make Portuguese Bitoque

Step 1: Season and Rest the Steaks

First, prepare your steaks. Pat them completely dry, season them well with salt and pepper, and rub them with crushed garlic. Let them sit at room temperature for about 15 minutes to allow the seasonings to penetrate the meat.

Step 2: Sear the Steaks

In a large skillet, sear the steaks over medium-high heat with olive oil, more garlic, and bay leaves. Cook for a few minutes on each side to develop a nice brown crust, then transfer them to a plate to rest.

Step 3: Make the Pan Sauce

Using the same skillet, pour in the white wine to deglaze. Scrape the bottom of the pan to lift all the flavorful browned bits. Let the wine reduce, then remove the pan from the heat and swirl in cold butter to create a smooth, glossy sauce.

Step 4: Fry the Eggs and Assemble

While the steaks are resting, quickly fry the eggs sunny-side up in a separate pan. To serve, place a steak on each plate, spoon the sauce over the top, and finish with a fried egg. Add a side of fries to complete the meal.

Storage Tips for Portuguese Bitoque

Store leftover steak and sauce separately in airtight containers in the refrigerator for up to 3 days. Freezing is not recommended. Reheat the steak gently in a skillet and warm the sauce separately. For best results, cook a fresh egg just before serving.

Expert Tips for Portuguese Bitoque

  • Food Safety: The USDA recommends cooking whole cuts of beef to a minimum internal temperature of 145°F (63°C) followed by a 3-minute rest period.
  • For the best sauce, use cold butter straight from the refrigerator. Adding it off the heat helps create a smooth emulsion that is less likely to separate.
  • You can choose to leave the crushed garlic cloves in the sauce for a more rustic presentation, or you can strain them out for a smoother finish.
  • Do not overcrowd the skillet when searing the steaks. If your pan is not large enough, cook the steaks in two batches to ensure they get a good crust.

What to Serve with Portuguese Bitoque?

This dish is traditionally served with French fries to soak up every bit of the sauce. A simple green salad or a side of white rice also pairs nicely.

Portuguese Bitoque Recipe FAQs

What cut of beef is best for Bitoque?

Thin-cut sirloin, rump, or strip steaks are traditional and work well because they are tender and cook quickly. Look for steaks that are about 1-inch thick.

Can I make Bitoque without wine?

Yes. If you prefer not to use wine, you can substitute it with an equal amount of beef broth. Add a small splash of white wine vinegar or lemon juice at the end to provide a touch of acidity.

Why did my sauce separate or look greasy?

This usually happens if the pan is too hot when the butter is added. To prevent this, always remove the pan from the heat source before you start swirling in the cold butter pieces.

Servings 4 servings

Ingredients

  • 4 beef steaks about 6 oz (170 g) each and 1-inch thick, sirloin or strip
  • Salt and freshly ground black pepper to taste
  • 8 cloves garlic peeled and crushed
  • 2 tbsp olive oil
  • 2 bay leaves
  • 3/4 cup dry white wine 180 ml
  • 4 tbsp cold unsalted butter cut into 4 pieces, 1/2 stick
  • 4 large eggs
  • 1 tbsp butter or oil for frying eggs
  • For serving: French fries and/or white rice

Instructions

  • Pat the steaks dry with paper towels and season both sides with salt and pepper. Rub 4 of the crushed garlic cloves all over the steaks. Set aside at room temperature for at least 15 minutes.
  • Heat the olive oil in a large skillet over medium-high heat. Add the remaining 4 crushed garlic cloves and the bay leaves, cooking for about 1 minute until fragrant.
  • Carefully place the steaks in the skillet, ensuring not to overcrowd the pan (work in batches if needed). Sear for 2-4 minutes per side for medium-rare, or until cooked to your preference. For medium-rare, the internal temperature should read 135°F (57°C).
  • Transfer the steaks to a plate and cover loosely with foil to rest. The temperature will rise to a final safe temperature of 145°F (63°C) as they rest.
  • Return the skillet to the heat. Pour the white wine into the pan to deglaze, using a wooden spoon to scrape up any browned bits from the bottom. Let it bubble and reduce by about half, which should take 2-3 minutes.
  • Remove the pan from the heat. Add the cold butter pieces one at a time, swirling the pan continuously until the butter is melted and the sauce is smooth and glossy.
  • In a separate nonstick skillet, melt 1 tablespoon of butter or oil over medium heat. Crack the eggs into the pan and fry them sunny-side up until the whites are set but the yolks are still runny.
  • To serve, place a rested steak on each plate. Pour a generous amount of the pan sauce over the steak and top with a fried egg. Serve immediately with French fries or rice.
