Jamaican Curry Chicken

Jamaican curry chicken is a comforting, deeply flavorful stew. It gets its signature taste from a unique blend of spices, a fresh herb marinade, and creamy coconut milk.

While it requires some marinating time, the active cooking is straightforward. The result is a pot of tender chicken and vegetables in a sauce that is rich, aromatic, and satisfying. This is a great dish to make when you want a dinner with layers of flavor.

Why You’ll Love Jamaican Curry Chicken

  • Marinating the chicken in a fresh ‘green seasoning’ paste infuses the meat with flavor from the inside out.
  • Toasting the curry powder in hot oil before adding the chicken is a traditional technique that blooms the spices for a more fragrant and colorful sauce.
  • Simmering everything with coconut milk and a whole scotch bonnet pepper creates a creamy, balanced sauce with a warm, fruity heat.

Jamaican Curry Chicken Ingredients

  • Jamaican Curry Powder: Look for a brand from Jamaica, as its flavor profile is different from Indian curry powders. It’s often brighter yellow from turmeric and contains allspice.
  • Scotch Bonnet Pepper: This pepper provides the signature fruity heat of Jamaican cuisine. If you cannot find it, a habanero pepper is the next best substitute.
  • Chicken: Bone-in, skin-on chicken pieces like thighs or drumettes add the most flavor to the sauce. If you prefer boneless, chicken thighs are a good choice as they stay moist.
  • Coconut Milk: Use full-fat, canned coconut milk for the richest, creamiest sauce. Light coconut milk will result in a thinner sauce.

Exact quantities are in the recipe card below.

How to Make Jamaican Curry Chicken

Step 1: Make the Marinade and Prep the Chicken

First, create the green seasoning marinade by blending half an onion with bell pepper, scallions, garlic, ginger, and spices. Clean your chicken pieces, pat them dry, and then thoroughly coat them in the marinade. Let the chicken rest in the refrigerator for at least four hours to absorb all the flavors.

Step 2: Build the Curry Base

In a heavy pot, heat oil and toast the Jamaican curry powder until it’s very fragrant. Next, brown the marinated chicken pieces on all sides. This searing step adds another layer of flavor to the finished dish.

Step 3: Simmer to Finish

Add chicken broth, the remaining onion, and a whole scotch bonnet pepper to the pot. Let it simmer to start developing the sauce. Finally, stir in the potatoes, carrots, and coconut milk, and continue to simmer until the vegetables are tender and the sauce has thickened.

Storage Tips for Jamaican Curry Chicken

Store leftovers in an airtight container in the refrigerator for up to 3 days. This dish also freezes well for up to 3 months. Reheat gently on the stovetop or in the microwave until heated through, adding a splash of water or broth if the sauce is too thick.

Expert Tips for Jamaican Curry Chicken

  • For food safety, always cook poultry to a minimum internal temperature of 165°F (74°C) measured with a meat thermometer.
  • Toasting the curry powder in oil before adding other ingredients is a key step that brings out the full aroma of the spices.
  • For flavor without intense heat, add the scotch bonnet pepper whole and remove it before serving. For a spicier dish, you can slice it open or chop it finely.
  • Bone-in chicken, like thighs and drumsticks, will give you a more flavorful sauce, but boneless, skinless chicken thighs or breasts also work well.

What to Serve with Jamaican Curry Chicken?

This curry is traditionally served with fluffy white rice or with soft roti for dipping into the sauce.

Jamaican Curry Chicken Recipe FAQs

Is Jamaican curry chicken very spicy?

The heat level is adjustable. Using a whole, uncut scotch bonnet pepper adds flavor and mild warmth. For a spicier curry, you can slice or mince the pepper before adding it.

Can I make this without marinating the chicken for hours?

You can, but the flavor will not be as deep. If you are short on time, even 30 minutes of marinating is better than none. The long marination is what makes the chicken so flavorful.

What’s the difference between Jamaican and Indian curry?

The primary difference is the spice blend. Jamaican curry powder features allspice and a higher ratio of turmeric, giving it a distinct flavor and color. The cooking method, especially ‘burning the curry,’ is also characteristic of the Jamaican style.

Ingredients

  • 2.5 lbs chicken pieces bone-in or boneless, 1.1 kg
  • 1 lime or 2 Tbsp white vinegar for cleaning chicken, 30 ml
  • 1 medium yellow onion divided
  • 1/2 medium green bell pepper
  • 2 scallions green onions
  • 2 cloves garlic
  • 1-inch piece fresh ginger peeled, 2.5 cm
  • 1 tsp dried thyme
  • 1/2 tsp ground allspice
  • 1 tsp salt
  • 2 Tbsp vegetable oil 30 ml
  • 2 Tbsp Jamaican curry powder 15 g
  • 1 whole scotch bonnet pepper plus more for marinade if desired
  • 2 medium carrots peeled and sliced into 1/2-inch rounds
  • 2 medium potatoes peeled and cubed, about 1 lb / 450 g
  • 1 cup chicken broth 240 ml
  • 1 cup full-fat coconut milk 240 ml

Instructions

  • To make the marinade, combine half the yellow onion, the green bell pepper, scallions, garlic, ginger, thyme, allspice, and salt in a blender or food processor. If you like it spicy, add a piece of the scotch bonnet. Blend until it forms a rough paste.
  • Clean the chicken pieces with lime juice or vinegar and water, then pat completely dry. Place the chicken in a large bowl, pour the marinade over it, and rub it into all the pieces. Cover and refrigerate for at least 4 hours or overnight.
  • Heat the vegetable oil in a large Dutch oven or heavy pot over medium heat. Add the curry powder and stir constantly for 30-60 seconds until fragrant. This step, called 'burning the curry,' deepens its flavor.
  • Add the marinated chicken to the pot in a single layer, shaking off excess marinade first. Cook for 3-4 minutes per side until browned. Do this in batches if needed to avoid crowding the pot.
  • Return all chicken to the pot. Add the chicken broth, scraping up any browned bits from the bottom. Chop the remaining half of the onion and add it to the pot along with the whole scotch bonnet pepper. Bring to a simmer, then reduce heat to low, cover, and cook for 15 minutes.
  • Stir in the carrots, potatoes, and coconut milk. Ensure the vegetables are mostly submerged. Bring back to a simmer, then cover and continue to cook for 20-25 minutes, or until the vegetables are fork-tender and the chicken is cooked through.
  • Check that the chicken has reached a safe internal temperature of 165°F (74°C). Remove the whole scotch bonnet pepper before serving. Taste the sauce and add more salt if needed. Let it rest for a few minutes for the sauce to thicken slightly.
