How to Make Lemon Almond Energy Balls

  • Combine Ingredients: Place the Medjool dates, gluten-free oats, almonds, turmeric, fresh lemon juice, and zest into your food processor.
  • Process Smoothly: Blend until a sticky mixture forms, making sure to scrape down the sides occasionally.
  • Adjust Consistency: If the mixture appears too dry, add a splash of water or an extra drizzle of lemon juice.
  • Form Balls: Take about a tablespoon of the mixture and roll it into small balls, roughly 1 inch in diameter.
  • Coat with Coconut: If using coconut flakes, roll each ball in them for added texture and flavor.
  • Chill Out: Place the energy balls in the refrigerator for at least 30 minutes.

Notes

Keep energy balls in an airtight container; they’ll last up to two weeks in the fridge and can be frozen for longer storage.
