Cooking Instructions

  • In a large pot, add the chicken thighs or breasts, chicken broth, diced onion, minced garlic, bay leaves, oregano, cumin, salt, and pepper. Bring to a simmer over medium heat and let it cook until the chicken is very tender, about 30-40 minutes.
  • Carefully remove the chicken from the pot and place it on a cutting board. With two forks, shred the chicken into bite-sized pieces, then set it aside.
  • In a blender, combine the husked tomatillos, green peppers, any remaining garlic, and cilantro. Blend until smooth and bright green.
  • Return the shredded chicken to the pot. Add the drained and rinsed hominy, and stir in the green sauce. Allow everything to simmer together for 10-15 minutes.
  • Before serving, taste your soup and adjust the seasoning with additional salt, black pepper, or a squeeze of lime juice if desired.
  • Ladle the Chicken Pozole Verde Soup into bowls and let everyone customize their portion with toppings.
