- 1.5 lbs yellow potatoes cut into 1-inch cubes, about 680g
- 2 cups baby carrots about 250g
- 1 large yellow onion cut into 1-inch pieces
- 2 bell peppers cut into 1-inch pieces, any color
- 1 medium zucchini cut into 1/2-inch thick half-moons
- 1 lb smoked kielbasa sausage sliced into 1/2-inch rounds, 450g
- 3 tbsp olive oil 45ml
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- Whole grain mustard for serving, optional
Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easier cleanup.
On the baking sheet, combine the cubed potatoes, baby carrots, and onion pieces.
Drizzle with the olive oil and sprinkle with salt, black pepper, and garlic powder. Toss well to coat all the vegetables evenly.
Spread the vegetables in a single layer. Roast for 20 minutes, until they begin to soften.
Remove the pan from the oven. Add the sliced kielbasa, bell peppers, and zucchini to the pan. Gently toss everything together.
Return the pan to the oven and roast for another 20-25 minutes, stirring halfway through.
The dinner is ready when the vegetables are tender and lightly browned, and the kielbasa is heated through to a safe temperature.
Serve warm, with whole grain mustard on the side if you like.
Food Safety: Most smoked kielbasa is pre-cooked, but always heat it to a minimum internal temperature of 160°F (71°C) before serving.
Use a large enough sheet pan so the ingredients can spread out. Overcrowding will steam the vegetables instead of roasting them. Use two pans if needed.
Feel free to use other root vegetables like sweet potatoes or parsnips. Adjust roasting time as needed.
