Ingredients
  

For the Cabbage Rolls

  • 2 tablespoons Olive Oil can substitute with avocado oil
  • 2 cloves Garlic minced, or garlic powder if fresh is unavailable
  • 1 tablespoon Ginger freshly grated, or use ground ginger
  • 1 medium Shallot or onion for a stronger flavor
  • 1 pound Ground Pork can swap with ground turkey or chicken
  • 1 medium Carrot grated zucchini can be a lower-carb substitute
  • 2 tablespoons Fish Sauce or soy sauce as a gluten-free alternative
  • 2 tablespoons Tamari gluten-free soy sauce alternative
  • 2 stalks Green Onions or chives as a substitute
  • 1/4 cup Cilantro or parsley for those who dislike cilantro
  • 12 leaves Cabbage Leaves Napa cabbage is a tasty alternative

For the Dipping Sauce

  • 3 tablespoons Tamari
  • 2 tablespoons Sugar-free Maple Syrup or erythritol/stevia
  • 1 tablespoon Toasted Sesame Oil
  • 2 tablespoons Lime Juice

Preparation

  • Blanch Cabbage Leaves: Bring a large pot of water to a boil. Blanch cabbage leaves for 1-2 minutes until bright green, then transfer to an ice bath.
  • Prepare Filling: In a skillet, heat olive oil over medium heat. Sauté shallots until translucent. Add garlic and ginger, cooking for another minute. Incorporate ground pork and cook until browned. Mix in carrot, fish sauce, tamari, green onions, and cilantro, and remove from heat.
  • Prepare Cabbage Rolls: Trim a V-shape at the base of each blanched cabbage leaf. Add 2-3 spoonfuls of filling at the center and roll tightly, tucking in the sides.
  • Bake Rolls: Preheat oven to 350°F (175°C). Arrange rolls seam-side down in a baking dish, drizzle with dipping sauce, and bake uncovered for 15-20 minutes until tender.

Notes

Optional: Garnish with green onions for freshness. Keep an eye on rolls while baking to prevent drying out.
