For the Cabbage

  • 1 head Green Cabbage Cut into wedges
  • 2 tablespoons Olive Oil For searing
  • 2 tablespoons Butter Skip for dairy-free option

For the Sauce

  • 1 medium Red Onion Diced
  • 3 cloves Garlic Minced
  • 1 cup Broth (Chicken or Vegetable) Low-sodium preferred
  • 8 ounces Cream Cheese Dairy-free alternatives work too
  • 1 cup Heavy Cream Can substitute with milk
  • 1/2 cup Sun-Dried Tomatoes Oil-preserved recommended
  • 2 teaspoons Dried Herbs (Oregano, Thyme, Rosemary) Adjust if using fresh
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Red Pepper Flakes Optional
  • 1/2 cup Parmesan Cheese Freshly grated
  • 1/4 cup Fresh Parsley Chopped, for garnish

Cooking Instructions

  • Preheat the oven to 375°F (190°C).
  • Cut the cabbage into 8 wedges while keeping the core intact.
  • Heat olive oil in a cast-iron skillet over medium heat. Sear the cabbage wedges cut-side down for about 2-3 minutes until golden brown.
  • Remove the cabbage from the skillet and add butter; sauté the diced red onion until translucent. Then, add minced garlic and cook for an additional 30 seconds.
  • Deglaze the pan with broth, scraping up any flavorful bits stuck to the bottom. Whisk in cream cheese until melted smoothly.
  • Stir in heavy cream, sun-dried tomatoes, and dried herbs. Let simmer for 2-3 minutes.
  • Mix in grated Parmesan cheese, return the cabbage wedges to the skillet, and spoon sauce over them.
  • Cover the skillet and bake for 45 minutes. Then uncover and bake for an additional 15-20 minutes until the cabbage is tender.
  • Let rest for 5 minutes before serving, garnish with fresh parsley.

Notes

Serve with warm crusty bread to soak up the creamy sauce.
