For the Dough

  • 500 g All-purpose flour Substitute with bread flour for chewier texture
  • 100 g Sugar Use brown sugar for a deeper flavor
  • 7 g Instant yeast Active dry yeast can be used but requires activation
  • 1 tbsp Lemon zest Swap for orange zest for a different zing
  • 1 tsp Kosher salt Regular salt works too, but use a little less
  • 250 ml Milk (room temperature) Non-dairy milk can serve as an alternative
  • 2 pcs Egg yolks Whole eggs can work in a pinch
  • 100 g Unsalted butter Use salted butter but reduce other salt in the recipe
  • 1 tbsp Vanilla extract Try almond extract for a unique flavor

For the Filling & Coating

  • 200 g Raspberry jam Substitute with apricot jam for variety
  • 100 g Granulated sugar (for coating) Mix with cinnamon for a cozy touch
  • 50 g Powdered sugar Skip if you prefer a glaze

  • 1 l Oil for frying Use a neutral oil like canola or avocado

How to Make German Jam Donuts

  • In a stand mixer, combine flour, sugar, instant yeast, salt, and lemon zest. Mix well, then add the egg yolks, melted butter, vanilla extract, and room temperature milk. Knead until the dough is smooth and elastic, about 10 minutes.
  • Form the dough into a ball and place it in a greased bowl. Cover with a kitchen towel and let it rise in a warm area until doubled in size, approximately 45-60 minutes.
  • Punch down the risen dough to remove air, then divide it into equal pieces weighing about 80g each. Roll each piece into a ball and place them on a lined baking sheet. Cover and let rise again for 30-60 minutes until puffy.
  • In a deep pan, heat oil to 350-365°F, ensuring there is at least two inches of oil for frying.
  • Carefully place the dough balls in the hot oil, frying each for about 2 minutes per side, or until they become golden brown. Drain on paper towels to remove excess oil.
  • Once cooled slightly, use a piping bag with a filling tip to inject raspberry jam into the side of each Berliner, ensuring to fill them generously.
  • Roll the filled donuts in granulated sugar and dust with powdered sugar before serving them warm for the ultimate treat!
