  • 2 tablespoons Pulled Pork Seasoning Store-bought or homemade
  • 1 cup BBQ Sauce Use your favorite brand or homemade

For the Base

  • 2 cups Rice or Quinoa Cauliflower rice can be used for a low-carb option

For the Toppings

  • 2 cups Fresh Vegetables Bell peppers, corn, and cilantro recommended
  • 1 each Avocado Make sure avocados are ripe
  • 2 each Lime Wedges

How to Make

  • Prepare the Pork: Trim any excess fat from the pork shoulder and pat it dry. Generously season with the pulled pork seasoning, ensuring all sides are coated to infuse flavor.
  • Sear the Meat: Heat a splash of oil in a skillet over medium-high heat. Sear the pork on all sides until it’s beautifully browned.
  • Slow Cook: Transfer the seared pork to a slow cooker. Pour your BBQ sauce over it, cover, and cook on low for 8 hours or on high for about 4 hours.
  • Shred the Pork: When the pork has finished cooking, shred the meat directly in the slow cooker using two forks.
  • Prepare Base & Toppings: As the pork cooks, prepare your rice or quinoa and chop your fresh vegetables.
  • Assemble Bowls: In each bowl, layer your rice or quinoa first, then pile on the shredded pork, followed by fresh veggies, avocado slices, and a squeeze of lime.
