  • 1 pound Shrimp Fresh, peeled, and deveined
  • 2 tablespoons Lime Juice Freshly squeezed
  • 1 tablespoon Olive Oil Extra virgin recommended

For the Salad Base

  • 2 cups Mango Ripe, diced
  • 1 avocado Avocado Ripe, diced
  • 1/4 cup Herbs (Cilantro or Parsley) Chopped

Optional Add-Ins

  • 1 pepper Jalapeños Sliced
  • 1 cup Cucumber Diced
  • 1 cup Black Beans Rinsed and drained

Preparation

  • Peel and devein the shrimp, rinse under cold water, and pat dry.
  • In a mixing bowl, combine shrimp with lime juice, olive oil, salt, and pepper. Marinate for 10-15 minutes.
  • Preheat the grill or grill pan. Grill shrimp for 2-3 minutes per side until opaque and pink.
  • Chop avocado and mango into bite-sized pieces and keep chilled.
  • Assemble the salad with grilled shrimp, avocado, and mango in a large dish, drizzle lime juice and olive oil, and sprinkle herbs.
  • Serve immediately for the best texture and freshness.
