  • 2 cups Pizza Sauce store-bought or homemade
  • 2 cups Shredded Mozzarella Cheese can swap in cheddar or dairy-free cheese
  • 1 cup Pepperoni omit for vegetarian version
  • 1 tbsp Italian Seasoning substitute with basil, oregano, and garlic powder

For Serving (optional)

  • 1 bunch Fresh Basil for garnish

How to Make Zucchini Pizza Casserole

  • Preheat Oven: Start by setting your oven to 350°F (175°C). Spray your baking dish with nonstick spray.
  • Prepare Zucchini: Slice the zucchini into thin rounds and sauté briefly for about 3-5 minutes.
  • Cook Ground Meat: In a skillet, brown your chosen ground meat for about 7-10 minutes until fully cooked.
  • Combine Ingredients: Mix together the cooked meat, pizza sauce, sautéed zucchini, Italian seasoning, and half of the mozzarella cheese.
  • Layer Mixture: Transfer half into the baking dish, add pepperoni if using, then add remaining mixture and top with rest of mozzarella.
  • Bake: Bake for about 30 minutes until bubbly and golden brown.
  • Serve: Let cool for a few minutes, then serve warm with fresh basil if desired.

Notes

For a spicy kick, add a sprinkle of crushed red pepper. Leftovers can be stored in an airtight container for up to 4 days.
