Ingredients
  

For the Base

  • 2 tablespoons Olive Oil To sauté the aromatics and enhance flavor; substitute with vegetable oil if needed.
  • 1 medium Onion Chopped; yellow or white onion preferred.
  • 3 cloves Garlic Minced; fresh preferred.
  • 1 pound Ground Beef or Turkey Opt for turkey for a leaner option or plant-based meat for vegetarian.

For the Seasoning

  • 1 packet Taco Seasoning Base for flavoring; can be homemade.
  • 1 teaspoon Cumin Optional but recommended.
  • 1 tablespoon Chili Powder Adds color and heat.

For the Soup

  • 1 can Black Beans Rinsed; can substitute kidney beans.
  • 1 can Pinto Beans Can substitute with more black beans.
  • 1 cup Corn Can use frozen corn.
  • 1 can Diced Tomatoes Canned or fresh.
  • 1 can Tomatoes with Green Chiles For mild flavor.
  • 4 cups Chicken Broth Can use vegetable broth.
  • 1 packet Ranch Seasoning Optional.
  • to taste Salt and Pepper Essential for seasoning.

For Toppings

  • 1 cup Shredded Cheddar Or any cheese you love.
  • 1 cup Sour Cream Greek yogurt is a good alternative.
  • 1/4 cup Cilantro Fresh herb; use parsley if not preferred.
  • 1/4 cup Green Onion Chives can also work.
  • 2 wedge Lime Wedges Squeeze for flavor.
  • 1 bag Tortilla Chips For crunch.

Instructions
 

Main Instructions

  • In a large pot, heat olive oil over medium heat. Sauté chopped onion until soft and translucent, about 3-4 minutes.
  • Stir in minced garlic and cook for an additional minute until fragrant.
  • Add ground beef or turkey, breaking it into pieces. Cook thoroughly until browned.
  • Include taco seasoning, cumin, and chili powder. Sauté for 1 minute.
  • Pour in black beans, pinto beans, corn, diced tomatoes, tomatoes with green chiles, and chicken broth. Bring to a gentle boil.
  • Lower the heat and let soup simmer for 10-20 minutes, stirring occasionally.
  • Taste and season with salt and pepper. Serve immediately, topped with cheese, sour cream, or lime.

Notes

For added flavor, consider adding a homemade taco seasoning and optional jalapeños.
