Preparation

  • Marinate the Chicken: Combine the sliced chicken breast, soy sauce, cornstarch, and minced garlic. Let it sit for about 10 minutes.
  • Cook the Chicken: Heat 1 tablespoon of oil in a skillet over medium heat. Add the marinated chicken and cook for 6-8 minutes until golden brown. Set aside.
  • Fry the Rice: In the same skillet, add the remaining oil. Spread the chilled jasmine rice and cook undisturbed for 5-7 minutes until the bottom is crispy.
  • Flip and Crisp Rice More: Gently flip sections of rice and continue to cook for another 6-8 minutes until beautifully golden.
  • Make the Dressing: Whisk together peanut butter, lime juice, honey, grated ginger, and enough warm water for desired consistency.
  • Combine Ingredients: In a large mixing bowl, combine the crispy rice, cooked chicken, cabbage, carrots, cucumber, and cilantro.
  • Dress the Salad: Drizzle the peanut dressing over the salad and toss gently to coat.
