Ingredients
  

For the Cauliflower

  • 1 head Cauliflower florets Substitute with broccoli florets for a different taste.
  • 2 tablespoons Olive oil Avocado oil can be used for a unique flavor.
  • 1 teaspoon Smoked paprika Adjust to taste for your preferred level of spiciness.
  • 1 teaspoon Ground cumin Use ground coriander for a milder alternative.
  • 1 teaspoon Garlic powder Fresh minced garlic is also an option.
  • to taste Salt Essential for flavor.
  • to taste Black pepper Essential for flavor.

For the Tortillas

  • 4 pieces Corn or flour tortillas Corn tortillas are gluten-free.

For the Slaw

  • 1 cup Red cabbage (shredded) Green cabbage can also be an alternative.
  • 1/4 cup Fresh cilantro Swap with parsley for a milder taste if desired.

For the Avocado & Lime Crema

  • 1 medium Avocado Consider using a spreadable vegan substitute if necessary.
  • 1 tablespoon Lime juice Infuses brightness.
  • 1/4 cup Vegan mayo Cashew cream makes an excellent alternative.
  • 1/4 cup Plant-based yogurt Non-dairy milk can substitute in a pinch.
  • 1 tablespoon Maple syrup Agave syrup or honey can be used for non-vegans.

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Combine the cauliflower florets in a large bowl with olive oil, smoked paprika, ground cumin, garlic powder, salt, and black pepper. Toss until the cauliflower is evenly coated.
  • Spread the seasoned cauliflower on a parchment-lined baking sheet. Roast for 20–25 minutes, flipping halfway through until golden brown and fragrant.
  • Prepare the lime crema by blending vegan mayo, plant-based yogurt, lime juice, and maple syrup in a blender until smooth.
  • Warm the tortillas in a skillet for about 20–30 seconds on each side until soft and pliable.
  • Assemble your tacos with roasted cauliflower, shredded red cabbage, and avocado slices.
  • Drizzle with lime crema, squeeze additional lime juice, and sprinkle fresh cilantro on top.
  • Serve immediately for the best texture and taste.

Notes

For added flavor, consider adding pickled red onions on top.
