How to Make Apple Cider Donuts

  • Preheat your oven to 350°F (175°C).
  • Pour 1 cup of apple cider into a saucepan and simmer until it reduces to ½ cup; let it cool completely.
  • In a large mixing bowl, cream together unsalted butter and granulated sugar until light and fluffy (2-3 minutes).
  • Beat in 1 egg and 1 tsp of vanilla extract until fully combined.
  • In another bowl, whisk together 1.5 cups of flour, 2 tsp of baking powder, 1 tsp of ground cinnamon, 0.5 tsp of ground nutmeg, and a pinch of salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with the cooled reduced apple cider, mixing until just combined.
  • Grease a mini donut pan and fill each cup about two-thirds full with the batter.
  • Bake for 8-10 minutes or until a toothpick comes out clean and they are lightly golden.
  • Allow to cool in the pan for several minutes before removing. Dip the tops in the glaze made from powdered sugar, more apple cider, and a sprinkle of cinnamon.
