How to Make Cheese Manakish

  • Prepare the Dough: Mix warm water with instant yeast and sugar, allowing it to sit for about 3 minutes. Combine it with 1 cup of flour, cover, and let it rest for 10 minutes. Add the remaining flour, olive oil, and salt, kneading until you have a shaggy dough. Let it rise covered for 30 minutes.
  • Prepare Toppings: While the dough is rising, mix the za’atar with olive oil. In another bowl, combine fresh mozzarella and feta cheese, ensuring a creamy blend.
  • Form Flatbreads: Divide the risen dough into 10 equal balls. Roll each ball into thin flatbreads.
  • Add Toppings: Spread the za’atar mixture over five flatbreads and cover the other five with the cheese blend. Sprinkle nigella seeds on top for added flavor.
  • Bake: Preheat your oven to 375°F (190°C) and bake flatbreads for 12-15 minutes until the bottoms are golden. Broil for an extra golden crust if desired.
  • Serve: Cover with a towel to keep the Manakish soft. Serve immediately with fresh vegetables like tomatoes and cucumbers.
