  • 10 oz Corn Tortillas or gluten-free tortillas
  • 1 can Cream of Chicken Soup or cream of mushroom soup
  • 2 tbsp Tex-Mex Seasonings customizable
  • 1 cup Bell Peppers chopped
  • 1 cup Onions chopped
  • 2 cups Cheddar or Mexican Blend Cheese or pepper jack
  • 1 can Green Chiles optional

For Serving

  • 1 cup Cilantro or Green Onions for garnish
  • 1 cup Sour Cream or Avocado for serving

Preparation

  • Start by shredding the rotisserie chicken into bite-sized pieces and chopping the bell peppers and onions.
  • In a generously greased baking dish, layer the corn tortillas, followed by the shredded chicken, diced veggies, and a blend of cream of chicken soup and Tex-Mex seasonings. Repeat these layers until all ingredients are used.
