For the Rice

  • 4 cups day-old jasmine rice Best texture; fresh rice can be cooled on a baking sheet for 30 minutes to reduce stickiness.
  • 1 cup pineapple Diced; use the shell for serving.

For the Vegetables

  • 2 tablespoons vegetable oil Can substitute with sesame oil.
  • 1 medium onion Standard yellow onion.
  • 3 cloves garlic Minced.
  • 1 medium carrot Diced.
  • 1 medium bell pepper Any variety.
  • 1 cup frozen peas Can substitute with corn or edamame.

For Protein Additions

  • 2 large eggs Optional; skip for a vegan option.
  • 1 cup shrimp or chicken or firm tofu Customizable protein.

For Seasoning

  • 3 tablespoons soy sauce Or tamari for gluten-free.
  • 1 tablespoon fish sauce Optional.
  • 1 teaspoon curry powder Adjust to taste.
  • 1 teaspoon white pepper Adjust to taste.
  • 1 teaspoon sugar Adjust if desired.
  • 1 teaspoon salt Adjust to taste.

For Garnishing

  • 1/2 cup roasted cashews Or peanuts.
  • 1/4 cup golden raisins Optional.
  • 3 tablespoons scallions Sliced.
  • 1/4 cup fresh cilantro Chopped.
  • 2 halves lime wedges For serving.

Instructions
 

Preparation

  • Slice the pineapple in half lengthwise, carefully carve out the flesh, and dice half for the rice, keeping the shells intact for serving.
  • Heat vegetable oil in a wok over medium heat, add finely chopped onion and minced garlic, and sauté until fragrant, about 1 minute.
  • Toss in diced carrot and bell pepper; stir-fry for 2-3 minutes until veggies are tender yet crisp.
  • Push the vegetables to one side, pour in the beaten eggs, and scramble until just set.
  • Incorporate the day-old jasmine rice, breaking any clumps apart, along with peas, diced pineapple, cashews, and golden raisins. Mix thoroughly.
  • Drizzle the mixture with soy sauce and fish sauce (if using), sprinkle in curry powder, white pepper, sugar, and salt. Stir for an additional 2-3 minutes.
  • Toss in the sliced scallions and give everything a final mix.
  • Spoon the fried rice into the hollowed pineapple halves, garnishing with fresh cilantro and serving with lime wedges.

Notes

For an extra flavor boost, drizzle with a little sesame oil just before serving.
