  • Soften the pitted dates in boiling water mixed with baking soda for about 10-15 minutes. Once soft, mash them into a coarse paste.
  • In a mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well, and stir in the vanilla extract.
  • Sift the all-purpose flour, baking powder, and salt together. Fold this mixture into the butter-sugar blend, and then introduce the mashed date mixture.
  • Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish, pour in the batter, and bake for 30-35 minutes.
  • In a saucepan over medium heat, combine unsalted butter, brown sugar, heavy cream, and a pinch of salt. Cook until it simmers, about 3-4 minutes, then stir in the vanilla extract.
  • Poke holes in the warm pudding and pour half of the toffee sauce over it. Serve warm, drizzled with the remaining sauce and topped with ice cream or whipped cream.
