How to Make Homemade Chocolate Pudding

  • In a medium saucepan, combine granulated sugar, unsweetened cocoa powder, cornstarch, and salt. Whisk well to eliminate any lumps and create a uniform dry mix.
  • Gradually pour in the milk while continually whisking to incorporate it smoothly into the dry ingredients.
  • Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and begins to bubble gently, about 5-7 minutes.
  • Remove the saucepan from heat. In a separate bowl, beat the egg yolks. Slowly add a couple of spoonfuls of the hot pudding mixture to the yolks to temper them.
  • Return the pan to low heat and stir continuously for an additional 2-3 minutes, allowing flavors to meld and the pudding to thicken further.
  • Remove from heat once thickened. Stir in unsalted butter and vanilla extract until fully melted and combined.
