Ingredients
  

For the Main Dish

  • 1 pound Kielbasa smoky protein choice; swap with Italian or andouille
  • 16 ounces Frozen Pierogies no need to thaw
  • 1 medium Red Onion adds sweetness; yellow onion works as substitute
  • 2 cups Bell Peppers various colors enhance flavor and presentation
  • 3 cloves Garlic fresh is best, can use powdered

For Roasting

  • 2 tablespoons Olive Oil essential for roasting
  • to taste Salt season to your taste
  • to taste Black Pepper season to your taste
  • 1 tablespoon Fresh Thyme or dried thyme/Italian seasoning
  • 1 teaspoon Smoked Paprika optional for warmth
  • to taste Sriracha or Hot Sauce for a spicy kick

Instructions
 

Preparation

  • Preheat the Oven to 400°F (200°C).
  • Line a large baking sheet with parchment paper.
  • Spread the frozen pierogies, sliced bell peppers, red onion, and minced garlic evenly across the baking sheet.
  • In a small bowl, combine olive oil, fresh thyme, smoked paprika, and hot sauce. Drizzle over the ingredients and toss gently.
  • Lay the kielbasa slices beside the pierogies and veggies evenly.
  • Bake in the preheated oven for 28-35 minutes, flipping halfway through.
  • Serve hot with sour cream and fresh herbs if desired.

Notes

For extra flavor, consider garnishing with fresh chopped parsley before serving.
