How to Make Mediterranean Lentil Soup

  • In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, and celery, sautéing them for about 5-7 minutes until softened and fragrant.
  • Stir in minced garlic and cook for an additional minute, allowing it to become aromatic.
  • Add rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat.
  • Let the soup simmer uncovered for about 30-40 minutes until the lentils are tender.
  • Use an immersion blender to partially blend the soup, leaving some lentils intact.
  • Stir in chopped fresh herbs and freshly squeezed lemon juice. Adjust seasoning to taste before serving!
