  • 4 cups Chicken Broth Vegetable broth for vegetarian option.

For Creaminess

  • 1 cup Heavy Cream Can substitute with half-and-half or coconut milk.
  • 2 tablespoons Butter Or olive oil for a lighter option.

Optional Garnish

  • 2 tablespoons Fresh Parsley Chopped for garnish.
  • 1 cup Leek Rings Thinly sliced for garnish.

Preparation

  • Prep Ingredients: Clean the leeks and chop the white and light green parts. Dice potatoes and shred cooked chicken.
  • Sauté Leeks: In a large pot, melt butter over medium heat, add sliced leeks and sauté for 5-7 minutes until softened.
  • Combine Ingredients: Add diced potatoes and chicken broth, stir, and bring to a gentle simmer for about 15 minutes.
  • Add Chicken & Cream: Stir in shredded chicken and heavy cream, cook for an additional 5 minutes to thicken.
  • Blend (Optional): Use an immersion blender for desired texture.
