Ingredients

  • 6 oz cream cheese softened, 170g
  • 1 ½ tbsp extra virgin olive oil 22ml
  • 1 tsp fresh lemon juice 5ml
  • 2 tbsp chopped fresh herbs like dill, chives, or parsley
  • 1 small garlic clove grated
  • ¼ tsp salt or to taste
  • ⅛ tsp black pepper or to taste
  • 4 slices sandwich bread
  • ½ cup thinly sliced English cucumber

Instructions

  • In a medium bowl, combine the softened cream cheese, olive oil, lemon juice, chopped herbs, grated garlic, salt, and pepper.
  • Use a fork or a small spatula to mix everything together until the spread is smooth and uniform.
  • Taste the mixture and adjust the seasoning with more salt or lemon juice if desired.
  • Lay the four slices of bread on a cutting board.
  • Divide the cream cheese spread evenly and apply a generous layer to one side of each bread slice.
  • Arrange the cucumber slices in a single layer on two of the bread slices, placing them on top of the cream cheese.
  • Place the remaining two bread slices on top, cream cheese side down, to complete the sandwiches.
  • Gently press down on the sandwiches. If you like, trim the crusts off.
  • Cut the sandwiches in half, either diagonally or straight across, and serve immediately.

Notes

For easy mixing, let the cream cheese sit at room temperature for about 30 minutes to soften before you begin.
Feel free to use any combination of soft, fresh herbs you enjoy. Basil or cilantro would also work well.
You can add other thinly sliced vegetables like radishes, tomatoes, or a few leaves of spinach for extra crunch and flavor.
If you don't have fresh garlic, you can substitute it with ¼ teaspoon of garlic powder.
