Ingredients

  • 4 ounces plain goat cheese log 113g
  • 1/4 cup pecans finely chopped, 30g
  • 1/4 cup dried cranberries finely chopped, 30g
  • 1 tablespoon fresh rosemary finely chopped
  • 3 tablespoons honey divided, 45ml

Instructions

  • In a small bowl, combine the finely chopped pecans, dried cranberries, and rosemary. Spread this mixture evenly on a plate or a sheet of wax paper.
  • Place the goat cheese log on a separate clean plate.
  • Drizzle 2 tablespoons of the honey over the goat cheese log.
  • Use the back of a spoon or clean fingers to gently spread the honey over the entire surface of the log.
  • Carefully roll the honey-coated log in the cranberry-pecan mixture. Press gently to help the coating adhere to all sides.
  • Drizzle the remaining 1 tablespoon of honey on your serving platter. This helps keep the cheese log from sliding.
  • Place the coated goat cheese log on the platter. Serve immediately with crackers, bread, or sliced fruit.

Notes

For easier coating, let the goat cheese log sit at room temperature for 15-20 minutes to soften slightly.
Chopping the nuts and cranberries finely is key. A uniform, small chop helps the coating stick much better and makes for neater slices.
Garnish the platter with a few extra whole cranberries, pecans, or a fresh sprig of rosemary for a finished look.
