For the Casserole

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  • Wash and chop the vegetables into bite-sized pieces. Steam them for about 5–7 minutes until just tender.
  • Melt butter in a medium saucepan over medium heat. Stir in flour to create a roux and cook for 1–2 minutes until bubbly.
  • Gradually whisk in warm milk and continue stirring until the sauce thickens, about 3–5 minutes.
  • Stir in garlic powder, nutmeg, salt, and pepper, then add cheddar and Parmesan until melted.
  • Combine the steamed vegetables with the cheese sauce in a large bowl, being careful not to mash the vegetables.
  • Transfer the vegetable mixture to the prepared baking dish, spreading it evenly. Sprinkle breadcrumbs on top if desired.
  • Bake for 20–25 minutes or until bubbly and golden. Broil for 2-3 minutes at the end for extra crisp.
  • Let it rest for 5-10 minutes before garnishing with chopped parsley and serving warm.

Notes

Use warm milk to avoid lumps in your cheese sauce. Consider assembling the casserole up to 24 hours in advance for easier prep.
