- 1/2 cup unsalted butter 115g
- 1 cup packed light brown sugar 220g
- 1 cup cayenne pepper hot sauce (such as Frank's RedHot) 240ml
- 1 tsp cayenne pepper or red pepper flakes optional, 2g
Combine the unsalted butter and packed light brown sugar in a small saucepan.
Place the saucepan over medium heat.
Stir continuously until the butter melts and the brown sugar completely dissolves. This should take about 5 minutes.
Once the mixture is smooth and no sugar granules remain, remove the pan from the heat.
Carefully pour the hot sauce and optional cayenne pepper into the saucepan.
Whisk the mixture until the sauce is fully combined, smooth, and glossy.
Let the sauce cool for a few minutes. It will thicken as it cools.
Toss with fully cooked chicken wings to coat them evenly before serving.
This recipe makes enough sauce to generously coat about 2 pounds (900g) of cooked chicken wings.
For a milder sauce, omit the optional cayenne pepper. For a spicier sauce, you can add more to your liking.
Food Safety: Always cook chicken wings to a safe internal temperature of 165°F (74°C). Use a meat thermometer to check for doneness before tossing with the sauce.
