Ingredients

  • Zest the orange and juice it, then soak the cranberries in the juice for about 10 minutes to plump them up.
  • In a skillet, toast the pistachios over medium heat until fragrant and slightly golden, then roughly chop them.
  • In a large bowl, sift together all-purpose flour, baking powder, baking soda, cinnamon, and salt.
  • In a separate bowl, beat the softened butter and light brown sugar until fluffy. Mix in the orange zest.
  • Add the egg (or flax egg) and vanilla extract, blending until smooth.
  • Gradually add dry ingredients to the wet mixture, then fold in rolled oats, chopped pistachios, and soaked cranberries.
  • Scoop dough onto a parchment-lined baking sheet, chill for 30 minutes.
  • Preheat your oven to 350°F (175°C).
  • Bake cookies for 14-15 minutes until edges are golden brown and centers are soft.
  • Allow cookies to cool on the baking sheet for 5-10 minutes before transferring to a wire rack.

Notes

For extra sweetness, drizzle cookies with melted chocolate before serving.
