For the Blueberry Sauce

  • 2 cups Fresh Blueberries Can substitute with frozen blueberries (thawed and drained).
  • ¼ cup Balsamic Vinegar Apple cider vinegar can be used as a substitute.
  • 2 tablespoons Honey Adjust to taste; maple syrup can be a less sweet option.
  • 2 tablespoons Fresh Thyme Can substitute with dried thyme (1 tablespoon fresh = 1 teaspoon dried).

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a medium saucepan, combine fresh blueberries, balsamic vinegar, honey, and fresh thyme. Gently mash the blueberries and simmer on low for about 5 minutes, until the sauce thickens slightly.
  • Season the chicken breasts with salt and pepper on both sides.
  • Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 2-3 minutes on each side until golden brown.
  • Pour the blueberry sauce over the seared chicken and bake in the oven for 20-25 minutes until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for a few minutes before serving.

Notes

Optional: Garnish with extra fresh thyme leaves for a nice presentation. Use a meat thermometer to prevent overcooking.
