Ingredients

For the Fruit Filling

  • 4 large Granny Smith apples peeled, cored, and sliced 1/4-inch thick, about 2 lbs / 900g
  • 2 cups fresh or frozen cranberries 200g
  • 1 cup granulated sugar 200g
  • 1/4 cup all-purpose flour 30g
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • Zest and juice of 1 medium orange

For the Topping

  • 1 cup old-fashioned rolled oats 90g
  • 1/2 cup sliced almonds 50g
  • 1/2 cup packed light brown sugar 110g
  • 1/2 tsp pumpkin pie spice
  • 4 tbsp cold unsalted butter cut into small cubes, 57g

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish.
  • In a large bowl, combine the sliced apples, cranberries, granulated sugar, flour, pumpkin pie spice, salt, and orange zest and juice. Stir until the fruit is evenly coated.
  • Pour the fruit mixture into the prepared baking dish and spread it into an even layer.
  • In a separate medium bowl, mix together the rolled oats, sliced almonds, brown sugar, and pumpkin pie spice.
  • Add the cold, cubed butter to the oat mixture. Use your fingertips or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
  • Sprinkle the topping evenly over the fruit filling.
  • Bake for 35 to 40 minutes, or until the fruit filling is bubbly and the topping is golden brown.
  • Let the crisp cool on a wire rack for at least 15 minutes before serving. This allows the filling to set slightly.

Notes

For the best texture, choose firm, tart apples like Granny Smith. Honeycrisp or Braeburn also work well.
The topping can be made up to 2 days in advance and stored in an airtight container in the refrigerator. This makes assembly even quicker.
If you have a nut allergy or dislike almonds, you can substitute them with chopped pecans or walnuts, or simply omit them.
Serve the crisp warm with a scoop of vanilla or cinnamon ice cream for a pleasant contrast of temperature and texture.
