- 1 package frozen puff pastry (2 sheets) thawed, 17.3-ounce / 490 g
- 6 ounces sharp cheddar cheese sliced, 170 g
- 2 medium crisp apples cored and thinly sliced, like Honeycrisp or Gala
- 1 large egg
- 1 tablespoon water
- 1/4 cup hot honey 85 g
- All-purpose flour for dusting
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
On a lightly floured surface, unroll one sheet of puff pastry. Place half of the cheese slices on one half of the pastry, leaving a small border.
Fold the other half of the pastry over the cheese. Top this folded section with half of the apple slices in an even layer.
Tightly roll the pastry into a log, starting from the folded edge. Pinch the seam to seal it, using a little water if needed. Place the log seam-side down on the prepared baking sheet. Repeat with the second sheet of pastry, remaining cheese, and apples.
In a small bowl, whisk the egg with 1 tablespoon of water to create an egg wash.
Brush the egg wash over the top and sides of both pastry logs. This helps them turn golden brown.
Bake for 15 to 20 minutes, or until the pastry is puffed and a deep golden brown.
Remove the pastries from the oven and immediately drizzle with hot honey. Let them cool for 5 to 10 minutes before handling.
Use a sharp knife to slice each log into 1-inch thick bites. Serve warm.
For the best results, thaw puff pastry in the refrigerator overnight. Working with it while it is still cold helps it puff up nicely.
Choose a firm, crisp apple like Honeycrisp, Gala, or Braeburn. These varieties hold their shape and provide a good texture after baking.
The egg wash is key for a beautiful brown crust. Ensure all exposed surfaces are brushed for an even color.
Food Safety: Always handle eggs safely. Cook dishes containing eggs thoroughly. The pastry is fully cooked when it's golden brown and puffed.
