Pecan Pie Cheesecake

This dessert brings together two favorites: a smooth, tangy cheesecake and a sweet, caramel-like pecan pie topping. It all sits on a simple vanilla cookie crust, creating a dessert that’s both creamy and crunchy.

This recipe requires some patience, mostly for chilling, so it is a great dessert to prepare a day ahead of a party or holiday meal. The result is a rich and satisfying treat that looks as good as it tastes.

Why You’ll Love Pecan Pie Cheesecake

  • Baking in a water bath creates a steamy environment, which cooks the cheesecake gently and evenly, helping to prevent cracks.
  • Using room temperature ingredients allows the filling to mix together smoothly and evenly, preventing lumps in the final cheesecake.
  • Cooling the cheesecake slowly—first in the turned-off oven, then at room temperature—prevents it from cracking due to a sudden temperature change.

Pecan Pie Cheesecake Ingredients

  • Cream Cheese: Use full-fat, block-style cream cheese for the best structure and texture. Avoid using whipped or tub-style cream cheese.
  • Pecans: Toasting the pecans before adding them to the topping deepens their nutty flavor. You can do this in a dry skillet over medium heat for a few minutes until fragrant.
  • Sour Cream: Full-fat sour cream adds moisture and a slight tang to balance the sweetness. Make sure it’s at room temperature for easy mixing.
  • Vanilla Wafers: These create a light, buttery crust. If you don’t have them, you can substitute an equal amount of graham cracker or shortbread cookie crumbs.

Exact quantities are in the recipe card below.

How to Make Pecan Pie Cheesecake

Step 1: Prepare the Crust and Pan

First, wrap your springform pan in foil to make it waterproof. Then, mix the cookie crumbs, sugar, and butter, and press the mixture into the pan to form the crust. Freezing the crust helps it stay firm when you add the filling.

Step 2: Make the Cheesecake Filling

Beat the cream cheese and sugar until there are no lumps before adding anything else. Add the eggs one at a time and mix gently. This helps prevent cracks. Finally, fold in the sour cream by hand.

Step 3: Bake and Cool the Cheesecake

Bake the cheesecake in a water bath until the center is almost set. Then, let it cool slowly in the turned-off oven and then at room temperature. The long, overnight chill in the fridge is the most important step for texture.

Step 4: Cook the Pecan Topping

While the cheesecake chills, make the topping. Whisk the ingredients on the stove until it becomes a thick, caramel-like sauce. Stir in the butter, vanilla, and toasted pecans off the heat. Let it cool slightly so it doesn’t melt the cheesecake.

Step 5: Assemble and Chill Again

Pour the cooled pecan topping over the fully chilled cheesecake. Spread it evenly, then pop it back in the fridge for at least an hour. This final chill helps the topping set firmly before you slice into it.

Storage Tips for Pecan Pie Cheesecake

Store leftover cheesecake tightly covered in the refrigerator for up to 4 days. Freezing is not recommended, as the texture of the topping can change upon thawing.

Expert Tips for Pecan Pie Cheesecake

  • A baked cheesecake is safely cooked when an instant-read thermometer inserted in the center registers 150°F (65°C).
  • Using room temperature ingredients, especially cream cheese, eggs, and sour cream, is very important for a smooth, lump-free cheesecake filling.
  • Do not over-mix the batter after adding the eggs. This can incorporate too much air, which can cause the cheesecake to rise too much and then crack as it cools.
  • The overnight chill is essential. It allows the cheesecake to set completely and for the flavors to meld together for the best texture and taste.

What to Serve with Pecan Pie Cheesecake?

This cheesecake is very rich and stands well on its own. A simple cup of coffee or a glass of milk is all you need to go with it.

Pecan Pie Cheesecake Recipe FAQs

Why did my cheesecake crack?

Cracks are usually caused by over-baking, over-mixing the batter after adding eggs, or cooling the cheesecake too quickly. Using a water bath and letting it cool slowly in the turned-off oven are the best ways to prevent cracks.

Can I use a different crust?

Yes, graham cracker crumbs or even crushed shortbread cookies would work well. You can substitute them using the same amount called for in the recipe.

Do I really have to use a water bath?

A water bath is highly recommended for cheesecake. It adds moisture to the oven and provides gentle, even heat, which results in a creamy texture and helps prevent the surface from cracking.

Ingredients

For the Crust

  • 2 cups vanilla wafer crumbs 220g
  • 1/4 cup granulated sugar 50g
  • 1/2 cup unsalted butter melted, 113g

For the Cheesecake Filling

  • 32 oz block cream cheese softened, 900g
  • 1 1/3 cups granulated sugar 267g
  • 1/4 cup cornstarch 30g
  • 2 tsp vanilla extract
  • 6 large eggs at room temperature
  • 1 cup sour cream at room temperature, 240g

For the Pecan Pie Topping

  • 1/2 cup packed light brown sugar 110g
  • 1/2 cup dark corn syrup 120ml
  • 1/4 cup cornstarch 30g
  • 4 large egg yolks
  • 1/4 tsp salt
  • 1 cup half-and-half 240ml
  • 2 tbsp unsalted butter 28g
  • 1 tsp vanilla extract
  • 1 1/2 cups chopped pecans toasted, 150g

Instructions

  • Preheat your oven to 325°F (165°C). Tightly wrap the outside of a 9-inch springform pan with a large sheet of heavy-duty aluminum foil. In a bowl, mix the vanilla wafer crumbs, sugar, and melted butter. Press this mixture firmly onto the bottom and about 1 inch up the sides of the pan. Place the pan in the freezer for at least 15 minutes.
  • To make the filling, use an electric mixer on medium speed to beat the softened cream cheese, sugar, and cornstarch until completely smooth, scraping the bowl as needed. Mix in the vanilla extract. Add the eggs one at a time, mixing on low speed just until each is blended.
  • Gently fold in the room-temperature sour cream with a spatula until just combined. Pour the filling into the chilled crust. Place the springform pan into a larger roasting pan. Carefully pour enough hot water into the roasting pan to come halfway up the sides of the springform pan.
  • Bake for 70 to 80 minutes. The cheesecake is done when the edges are set but the center still has a slight wobble. An instant-read thermometer inserted into the center should read 150°F (65°C). Turn off the oven, prop the door open slightly with a wooden spoon, and let the cheesecake cool in the oven for 1 hour.
  • Carefully remove the cheesecake from the water bath and place it on a wire rack. Run a thin knife around the edge of the cheesecake to loosen it from the pan. Let it cool completely to room temperature, which takes about 2 hours. Cover with plastic wrap and refrigerate for at least 8 hours, or overnight.
  • For the topping, whisk the brown sugar, corn syrup, cornstarch, egg yolks, and salt together in a medium saucepan. Gradually whisk in the half-and-half until smooth. Place the saucepan over medium heat.
  • Cook, whisking constantly, until the mixture thickens and begins to bubble, which should take about 5 to 7 minutes. Remove the pan from the heat. Stir in the butter and vanilla until the butter is fully melted, then fold in the toasted pecans.
  • Let the pecan topping cool for about 20 minutes, stirring it occasionally. Pour the warm topping over the top of the fully chilled cheesecake and spread it into an even layer. Return the cheesecake to the refrigerator for at least 1 more hour to allow the topping to set before slicing and serving.
