Nut-Free Pesto

Jump to Recipe Print Recipe

This nut-free pesto delivers all the fresh, bright flavor you expect from a classic basil pesto, but without any nuts. It’s a wonderful option for anyone with a nut allergy or for when you just don’t have pine nuts in the pantry. The secret is toasted rice, which provides a similar richness and texture.

You can make this sauce in about 20 minutes from start to finish. It’s a quick and versatile sauce to have on hand for pasta night, spreading on sandwiches, or spooning over grilled chicken or fish.

Why You’ll Love Nut-Free Pesto

  • Toasting the rice before grinding it brings out a deep, nutty flavor that mimics pine nuts.
  • Pulsing the basil, rather than blending it continuously, prevents it from turning dark and bitter.
  • Stirring in the olive oil at the end, instead of blending it, gives you a better texture and helps prevent the oil from developing a bitter taste.

Nut-Free Pesto Ingredients

  • Rice: Jasmine or Basmati rice works well because it’s aromatic. Sticky rice is another good option.
  • Basil: Use the freshest basil you can find. Be sure to use only the leaves and discard any tough stems, which can be bitter.
  • Parmesan Cheese: For the best flavor and texture, use a block of Parmesan cheese and grate it yourself. Pre-grated cheese often contains anti-caking agents.
  • Olive Oil: A good quality extra virgin olive oil will give your pesto the most flavor.
  • Garlic: Feel free to adjust the amount of garlic to your personal preference. Three cloves will give a noticeable but not overpowering flavor.

Exact quantities are in the recipe card below.

How to Make Nut-Free Pesto

Step 1: Toast and Grind the Rice

First, warm the uncooked rice in a dry skillet over medium heat. Keep it moving for about 10 minutes until it turns a nice golden brown. Let it cool slightly, then grind it into a powder using a spice grinder or a powerful blender.

Step 2: Build the Pesto Base

In a food processor, combine the ground rice powder with the garlic cloves, lemon zest, and salt. Blend these ingredients together until they form a fragrant, paste-like base for your pesto.

Step 3: Add Greens and Cheese

Add the fresh basil leaves to the food processor and pulse until they are finely chopped. Add the grated Parmesan cheese and pulse just a few more times to mix it in without over-processing.

Step 4: Finish with Olive Oil

Scrape the pesto mixture from the food processor into a bowl. Pour the olive oil over the top and use a spoon to stir everything together until it’s evenly combined. Let it rest for a short time before serving to allow the flavors to meld.

Storage Tips for Nut-Free Pesto

Store the pesto in an airtight container in the refrigerator for up to 5 days. To prevent browning, pour a thin layer of olive oil on top. You can also freeze pesto in an ice cube tray, then transfer the frozen cubes to a freezer bag for up to 3 months.

Expert Tips for Nut-Free Pesto

  • If you prefer a thinner pesto, you can stir in another tablespoon or two of olive oil until it reaches your desired consistency.
  • The pesto’s flavor will develop as it sits. It might taste strongly of garlic at first, but this will mellow out.
  • This recipe works best with a food processor or a high-powered blender that can handle grinding the rice.

What to Serve with Nut-Free Pesto?

Toss this pesto with your favorite pasta for a simple dinner. It’s also great as a spread for sandwiches and wraps or as a topping for grilled vegetables.

Nut-Free Pesto Recipe FAQs

Can I use something other than rice?

This specific recipe is designed around toasted rice for its unique texture and nutty flavor. For other nut-free options, toasted sunflower seeds or pumpkin seeds (pepitas) are common substitutes, but they will create a different style of pesto.

Why did my pesto turn out bitter?

Bitterness in pesto usually comes from over-blending the basil or the olive oil. Pulsing the basil briefly and stirring in the oil by hand at the end helps prevent this from happening.

Can I make this pesto dairy-free?

Yes, you can make a dairy-free version. Omit the Parmesan cheese and add 1 to 2 tablespoons of nutritional yeast for a cheesy, savory flavor. You may need to add a little extra salt as well.
