Fluffy Homemade Dumplings

This recipe brings together a rich, savory chicken stew and soft, biscuit-style dumplings all in one pot. The dumplings steam directly on top of the creamy base, absorbing flavor and becoming wonderfully tender.

From start to finish, this comforting meal is ready in about 45 minutes. It’s a straightforward dish that delivers satisfying results, making it a great option for a cozy weeknight dinner.

Why You’ll Love Fluffy Homemade Dumplings

  • Making a simple roux with butter and flour is the foundation for a thick, velvety sauce that coats the chicken nicely.
  • Baking powder is the key ingredient that gives the dumplings their signature light and fluffy texture as they steam.
  • Cooking the dumplings in a covered pot traps the steam, which cooks them gently and evenly all the way through.

Fluffy Homemade Dumplings Ingredients

  • Shredded Cooked Chicken: Using a rotisserie chicken saves time. You can also poach or bake chicken breasts and shred them yourself.
  • Chicken Stock: For better control over the final seasoning, choose a low-sodium chicken stock.
  • Light Cream: Half-and-half is a suitable substitute. For a richer sauce, you can use heavy cream.
  • Cold Butter: For the dumplings, the butter must be cold. This creates small pockets in the dough that result in a more tender texture.
  • Milk: Whole milk will provide a richer flavor to the dumplings, but any type of milk will work.

Exact quantities are in the recipe card below.

How to Make Fluffy Homemade Dumplings

Step 1: Make the Creamy Chicken Base

First, create a simple sauce by melting butter and whisking in flour to make a paste. Slowly pour in chicken stock to create a smooth, thick base. Let this simmer before stirring in the cooked chicken and cream.

Step 2: Mix the Dumpling Dough

In a separate bowl, combine the dry ingredients for the dumplings. Cut in a small amount of cold butter until the mixture looks like coarse crumbs, then stir in milk just until a soft dough comes together. Be careful not to overwork it.

Step 3: Simmer and Steam the Dumplings

Drop spoonfuls of the dough over the gently bubbling stew. Cover the pot, lower the heat, and let everything simmer for 15 minutes without lifting the lid. This allows the dumplings to steam and become fluffy.

Storage Tips for Fluffy Homemade Dumplings

Store leftovers in an airtight container in the refrigerator for up to 3 days. This dish does not freeze well, as the dumplings can become soggy. Reheat gently on the stovetop over low heat, adding a splash of milk or stock if the stew is too thick. Ensure the chicken reaches 165°F (74°C) when reheating.

Expert Tips for Fluffy Homemade Dumplings

  • Food Safety: Cooked poultry should always reach an internal temperature of 165°F (74°C). Use an instant-read thermometer to check the chicken in the stew before serving.
  • Do Not Peek: Lifting the lid while the dumplings cook releases steam, which can make them heavy and dense instead of light and fluffy.
  • Dough Handling: For the most tender dumplings, handle the dough as little as possible. Mix just until the ingredients are combined.
  • Chicken Prep: A store-bought rotisserie chicken is a convenient shortcut. You can also use any leftover cooked chicken you have on hand.

What to Serve with Fluffy Homemade Dumplings?

Serve hot on its own or with a simple side of steamed green beans or a crisp green salad.

Fluffy Homemade Dumplings Recipe FAQs

Why were my dumplings tough or dense?

This usually happens for two reasons: the dough was overmixed, or the lid was lifted during the cooking process. Mix the dough just until it comes together, and resist the urge to peek while the dumplings are steaming.

Can I make this gluten-free?

You can try substituting a gluten-free all-purpose flour blend that contains xanthan gum for both the stew and the dumplings. The texture may be slightly different.

Can I prepare chicken and dumplings ahead of time?

The stew base can be made up to two days in advance and refrigerated. Reheat it to a simmer before mixing and adding the fresh dumpling dough. The dumplings are best made and cooked right before serving.

Ingredients

  • 5 Tbsp unsalted butter divided, 70g
  • 6 Tbsp all-purpose flour 45g
  • 1/4 tsp paprika
  • 4 cups chicken stock 950ml
  • 1 cup light cream or half-and-half 240ml
  • 3 cups shredded cooked chicken about 450g
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp black pepper plus more to taste
  • 2 cups all-purpose flour 240g
  • 4 tsp baking powder
  • 1 tsp salt
  • 3/4 cup milk 180ml

Instructions

  • Melt 4 tablespoons of butter in a large Dutch oven or heavy-bottomed pot over medium heat. Whisk in 6 tablespoons of flour and the paprika. Cook, whisking constantly, for 1 minute to form a paste.
  • Gradually pour in the chicken stock while whisking continuously to prevent lumps. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened.
  • Stir in the shredded chicken, light cream, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring the stew back to a gentle simmer over medium-low heat. Taste and add more salt and pepper if needed.
  • While the stew simmers, prepare the dumplings. In a medium bowl, whisk together 2 cups of flour, the baking powder, and 1 teaspoon of salt.
  • Using a pastry blender or your fingertips, cut the remaining 1 tablespoon of cold butter into the flour mixture until it resembles coarse crumbs. Pour in the milk and stir with a fork just until a soft, sticky dough forms. Do not overmix.
  • Drop heaping tablespoonfuls of the dumpling dough onto the surface of the simmering stew, leaving a little space between each one.
  • Cover the pot with a tight-fitting lid, reduce the heat to low, and let it simmer for 15 minutes. Do not lift the lid while the dumplings are cooking.
  • After 15 minutes, uncover and check that the dumplings are cooked through and the chicken is heated to a safe internal temperature of 165°F (74°C). Serve immediately.
