This Dutch oven chicken breast recipe is a straightforward and satisfying one-pot meal. Tender chicken breasts are seared and then simmered in a rich sauce full of mushrooms, onions, and bell peppers. It’s a complete meal that comes together without a lot of fuss.

From start to finish, you can have this dinner on the table in about 45 minutes. The Dutch oven does most of the work, first on the stovetop to build flavor and then in the oven to finish cooking everything gently. This makes it a great choice for a weeknight.

Why You’ll Love Dutch Oven Chicken Breast

  • Searing the chicken first creates a deeply browned crust that adds a lot of flavor to the finished dish.
  • Using a heavy-bottomed Dutch oven ensures even, consistent heat, which helps cook the chicken gently without drying it out.
  • Finishing the dish in the oven allows the chicken to braise in the sauce, making it tender and soaking up all the flavors of the vegetables and broth.

Dutch Oven Chicken Breast Ingredients

  • Chicken Breasts: Boneless, skinless chicken breasts are ideal for this recipe. Try to use pieces that are similar in thickness for even cooking.
  • Diced Tomatoes: Using fire-roasted diced tomatoes will give the sauce an added layer of smoky flavor.
  • Mushrooms: Cremini (or baby bella) mushrooms have a firmer texture and a deeper, earthier taste than white button mushrooms.
  • Chicken Broth: Opt for low-sodium chicken broth to better control the final saltiness of the dish.
  • Bell Peppers: Any color of bell pepper works well. Using a mix of red, yellow, or orange adds color and a slightly sweeter taste.

Exact quantities are in the recipe card below.

How to Make Dutch Oven Chicken Breast

Step 1: Sear the Chicken

Start by seasoning the chicken breasts and searing them in the hot Dutch oven. This step is key for developing a flavorful, golden-brown crust. Once browned on both sides, set the chicken aside.

Step 2: Sauté the Vegetables

In the same pot, cook the onions, peppers, and mushrooms. This builds the foundation of your sauce, picking up all the flavorful bits left behind by the chicken. Add the garlic last so it doesn’t burn.

Step 3: Simmer and Bake

Create the sauce by adding the tomatoes and broth, then return the chicken to the pot. Cover it and transfer to the oven. Baking allows the chicken to cook through gently, staying moist and tender.

Storage Tips for Dutch Oven Chicken Breast

Store leftovers in an airtight container in the refrigerator for up to 3 days. This dish also freezes well for up to 3 months. Thaw in the refrigerator overnight and reheat gently on the stove or in the microwave until warmed through.

Expert Tips for Dutch Oven Chicken Breast

  • For food safety, always cook chicken to a minimum internal temperature of 165°F (74°C).
  • If you prefer a thicker sauce, you can stir in 1-2 tablespoons of tomato paste with the diced tomatoes. For a thinner sauce, add a bit more chicken broth.
  • To get a good sear, make sure the pot is hot before adding the chicken and do not overcrowd the pan. Cook in batches if necessary.
  • Let the chicken rest in the sauce for a few minutes after removing it from the oven. This helps it stay juicy.

What to Serve with Dutch Oven Chicken Breast?

This dish is great served over fluffy rice, mashed potatoes, or egg noodles to soak up the savory sauce. A side of crusty bread is also a good choice.

Dutch Oven Chicken Breast Recipe FAQs

Can I use chicken thighs instead of breasts?

Yes, boneless, skinless chicken thighs work well. They may need a few extra minutes of cooking time in the oven, so be sure to check for an internal temperature of 165°F (74°C).

What if I don’t have a Dutch oven?

You can use any large, heavy-bottomed pot or skillet that is oven-safe and has a tight-fitting lid. The key is that it can go from the stovetop directly into the oven.

Is this recipe spicy?

No, this dish is savory, not spicy. The smoked paprika adds a smoky flavor, not heat. If you’d like to add some spice, include 1/4 to 1/2 teaspoon of red pepper flakes with the other seasonings.

Ingredients

  • 4 large boneless skinless chicken breasts, about 2 lbs / 900g
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil 30ml
  • 2 tbsp butter 28g
  • 1 medium yellow onion chopped
  • 2 bell peppers sliced, any color
  • 8 oz cremini mushrooms sliced, 225g
  • 4 cloves garlic minced
  • 1 can diced tomatoes undrained, 28oz / 794g
  • 1 cup chicken broth 240ml
  • 1 tbsp Worcestershire sauce 15ml

Instructions

  • Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels. In a small bowl, mix the smoked paprika, garlic powder, salt, and pepper. Season the chicken on all sides with this mixture.
  • Place a Dutch oven over medium-high heat and add the olive oil. Once the oil is shimmering, carefully place the chicken breasts in the pot. Sear for 3-4 minutes per side, until golden brown. You may need to do this in two batches. Transfer the seared chicken to a plate.
  • Reduce the heat to medium. Add the butter to the Dutch oven. Once melted, add the chopped onion and sliced bell peppers. Cook, stirring occasionally, for 5-6 minutes until they begin to soften.
  • Add the sliced mushrooms and minced garlic to the pot. Cook for another 2-3 minutes, until the mushrooms have released some of their liquid and the garlic is fragrant.
  • Pour in the can of diced tomatoes (with their juices), chicken broth, and Worcestershire sauce. Stir everything together, scraping up any browned bits from the bottom of the pot. Bring the sauce to a gentle simmer.
  • Nestle the seared chicken breasts back into the sauce in the Dutch oven. Spoon a little of the sauce and vegetables over the top of the chicken.
  • Cover the Dutch oven with its lid and carefully transfer it to the preheated oven. Bake for 15-20 minutes, or until the chicken is cooked through.
  • Check that the internal temperature of the chicken has reached 165°F (74°C) with a meat thermometer. Let the dish rest for 5 minutes before serving.

For food safety, always cook chicken to a minimum internal temperature of 165°F (74°C).
