  • 1 cup short-grain sushi rice
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • ½ tsp salt
  • ½ cup sliced cucumber
  • ½ cup sliced carrots
  • ½ cup sliced radishes
  • 1 avocado, diced
  • 2 sheets seaweed, cut into strips
  • ½ cup mayonnaise
  • 2 tbsp yuzu juice
  • 1 tbsp Sriracha sauce

Instructions

  1. Rinse the sushi rice under cold water until clear. Combine with 1 cup of water in a saucepan. Boil over medium heat, cover tightly, and simmer on low for about 18 minutes.
  2. In a bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice and let cool.
  3. While the rice cools, chop cucumbers, carrots, radishes, and dice the avocado.
  4. In a small bowl, whisk mayonnaise, yuzu juice, and Sriracha until smooth; adjust spice level to taste.
  5. To assemble bowls: layer seasoned sushi rice first in serving dishes, then top with veggies and drizzle generously with spicy yuzu mayo. Garnish with seaweed strips.
