  • 14 oz diced tomatoes (canned)
  • 4 cups low-sodium chicken broth
  • 2 carrots, sliced
  • 2 bay leaves
  • 1 tsp smoked paprika
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, heat olive oil and sauté the chopped onion until translucent (about 3 minutes). Add minced garlic and cook for an additional minute.
  2. Stir in sliced carrots and cabbage; cook until the cabbage wilts slightly (about 5 minutes).
  3. Add the sliced sausage to the pot and stir well for about 3 minutes.
  4. Pour in diced tomatoes and chicken broth; add bay leaves and sprinkle smoked paprika. Bring to a gentle boil.
  5. Reduce heat and let the soup simmer for approximately 30 minutes, stirring occasionally.
