Chicken Wing Sauce

This simple chicken wing sauce delivers that classic sweet and spicy flavor everyone enjoys. It comes together on the stovetop in just a few minutes with only three main ingredients.

Making your own sauce gives you control over the sweetness and heat. It’s a quick way to prepare for a party or game day, and it coats wings beautifully for a sticky, flavorful finish.

Why You’ll Love Chicken Wing Sauce

  • Ready in 10 minutes: This sauce is exceptionally fast to make, using just one saucepan.
  • Simple ingredients: You only need butter, brown sugar, and your favorite cayenne hot sauce.
  • Customizable heat: Easily adjust the spice level by adding or omitting extra cayenne pepper.

Chicken Wing Sauce Ingredients

  • Unsalted Butter: Using unsalted butter lets you control the saltiness of the final sauce, as hot sauces vary in sodium. You can use salted butter if it’s what you have.
  • Light Brown Sugar: Provides the sweetness and helps create the thick, sticky texture. Dark brown sugar can be used for a deeper molasses flavor.
  • Cayenne Pepper Hot Sauce: A classic choice like Frank’s RedHot Original is recommended for its specific flavor profile and moderate heat. Other vinegar-based hot sauces will work too.
  • Cayenne Pepper: This is optional but adds an extra layer of heat without changing the sauce’s flavor. Red pepper flakes are a good substitute.

Exact quantities are in the recipe card below.

How to Make Chicken Wing Sauce

Step 1: Melt Butter and Sugar

In a small saucepan, combine the butter and brown sugar. Cook over medium heat, stirring often, until the sugar completely dissolves into the melted butter. The mixture should look smooth and uniform.

Step 2: Add Hot Sauce

Once the sugar mixture is smooth, take the pan off the heat. This step is important as it prevents the sauce from splattering too much when you add the liquid hot sauce.

Step 3: Whisk to Combine

Pour in the hot sauce and any optional cayenne pepper. Whisk everything together until the sauce is uniform and glossy. Let it cool for a few minutes to thicken slightly before using.

Storage Tips for Chicken Wing Sauce

Store leftover sauce in an airtight container in the refrigerator for up to one week. The sauce is not ideal for freezing as the texture can change upon thawing. Reheat gently on the stovetop or in the microwave before using.

Expert Tips for Chicken Wing Sauce

  • This recipe makes enough sauce to generously coat about 2 pounds (900g) of cooked chicken wings.
  • For a milder sauce, omit the optional cayenne pepper. For a spicier sauce, you can add more to your liking.
  • Food Safety: Always cook chicken wings to a safe internal temperature of 165°F (74°C). Use a meat thermometer to check for doneness before tossing with the sauce.

What to Serve with Chicken Wing Sauce?

Toss the sauce with freshly cooked chicken wings. Serve with celery and carrot sticks and a side of blue cheese or ranch dressing.

Chicken Wing Sauce Recipe FAQs

Can I make this sauce ahead of time?

Yes, you can prepare the sauce up to a week in advance and store it in an airtight container in the refrigerator. Reheat it gently before tossing with wings.

Is this sauce very spicy?

The primary heat comes from the hot sauce. It’s a medium heat level that’s balanced by the brown sugar. For less spice, use a milder hot sauce or omit the optional cayenne pepper. For more spice, add extra cayenne.

My sauce separated. How can I fix it?

If the butter separates, gently reheat the sauce over low heat while whisking constantly until it comes back together. Removing the pan from the heat before adding the hot sauce helps prevent this.
