  • 2 medium zucchini, sliced into half-moons
  • 1 large red onion, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Wash the zucchini under cool water and slice off both ends. Cut into half-moons about half an inch thick. Peel the red onion and slice it into thin rings.
  2. In a mixing bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper until well combined.
  3. Place sliced zucchini and red onions in a large bowl or resealable bag. Pour the marinade over them and toss gently until coated.
  4. Allow to marinate at room temperature for 30 minutes or refrigerate for up to 2 hours for deeper flavor.
  5. Preheat the grill or oven to medium heat. Grill marinated veggies for about 5-7 minutes per side until tender with char marks.
  6. Serve on a platter with any remaining marinade drizzled on top.
