  • 1 can (15 oz) black beans, rinsed and drained
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice (freshly squeezed)
  • 1/2 cup panko breadcrumbs
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat oven to 425°F (220°C). Toss sweet potato cubes with olive oil, salt, and pepper. Roast on a baking sheet for about 25 minutes until tender.
  2. Let sweet potatoes cool slightly, then mash in a large bowl until mostly smooth with some chunks for texture.
  3. Mix in black beans, red onion, cilantro, lime juice, panko breadcrumbs, chili powder, salt, and pepper until well combined.
  4. Form mixture into patties about half an inch thick.
  5. Heat olive oil in a skillet over medium heat. Cook patties for about five minutes per side until golden brown and crispy.
  6. Serve warm with optional toppings like avocado or yogurt sauce.
