  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup freshly squeezed lime juice
  • 2 poblano peppers
  • 2 cups fresh or frozen sweet corn
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 1 tbsp honey

Instructions

  1. Marinate chicken in lime juice, olive oil, salt, and pepper for at least 30 minutes.
  2. Preheat the grill over medium-high heat and lightly grease it.
  3. Grill marinated chicken for 6-7 minutes per side until fully cooked.
  4. Grill poblano peppers until charred all over (about 10 minutes). Place them in a bowl, cover with plastic wrap to steam for 5 minutes, then peel and chop.
  5. In a large bowl, combine corn, diced poblanos, red onion, and dressing made from olive oil and lime juice.
  6. Slice the grilled chicken and serve it on top of the salad with any remaining dressing.
