  • 4 cloves garlic (minced)
  • 1/4 tsp saffron threads
  • 2 tbsp olive oil
  • 1 cup bell peppers (chopped, red or yellow)

Instructions

  1. Prep your ingredients: Rinse seafood under cold water; scrub mussels clean. Chop garlic and bell peppers.
  2. Sauté aromatics: In a large skillet or paella pan, heat olive oil over medium heat. Add garlic and bell peppers; cook until softened.
  3. Toast the rice: Stir in Arborio rice and let it toast for about two minutes.
  4. Add stock: Pour in fish stock and add saffron. Bring to a simmer while stirring occasionally.
