  • 8 oz fettuccine or spaghetti
  • 1 cup fresh ricotta cheese
  • 2 cups broccoli florets
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Cook pasta according to package instructions until al dente.
  2. In the last two minutes of cooking, add broccoli florets to the pot.
  3. In a bowl, mix ricotta, lemon juice, lemon zest, garlic, olive oil, salt, and pepper until smooth.
  4. Drain pasta and broccoli (reserve some pasta water). Return to pot over low heat; stir in ricotta mixture.
  5. Mix well; if too thick, add reserved pasta water as needed.
  6. Toss with Parmesan cheese, adjust seasoning if necessary, and serve garnished with extra lemon zest or cheese.
