Instructions

  1. Rinse the long-grain white rice under cold water until the water runs clear.
  2. In a medium saucepan, combine rinsed rice, water, and a pinch of salt. Bring to a boil over medium-high heat.
  3. Reduce heat to low, cover, and simmer for 18-20 minutes or until all water is absorbed.
  4. Remove from heat and let sit covered for an additional 5 minutes. Fluff the rice with a fork.
  5. In a small bowl, whisk together lime juice, garlic, cilantro, and additional salt if desired. Pour over the fluffed rice.
  6. Gently fold the mixture into the rice until evenly coated. Serve warm.
