Twice baked potatoes are the ultimate comfort dish, featuring fluffy russet potatoes that are first baked, then filled with a creamy blend of buttery goodness, cheese, and bacon before being baked again for a crispy finish.   • 4 medium russet potatoes
  • 4 tablespoons unsalted butter
  • 1/2 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly.
  2. Place the washed potatoes on a lined baking sheet and bake for 45-60 minutes until fork-tender.
  3. Allow the potatoes to cool slightly, then cut in half lengthwise and scoop out the insides into a bowl, leaving enough potato in the skins for structure.
  4. Mix the scooped potato with butter, sour cream, cheddar cheese, bacon bits, salt, and pepper until creamy. Stir in chopped green onions.
  5. Spoon the mixture back into the potato skins and top with extra cheese if desired.
  6. Return to the oven for another 15-20 minutes until golden brown on top. Serve warm.
