  • 2 lbs beef short ribs
  • 4 large yellow onions, sliced
  • 3 cloves garlic, minced
  • 6 cups low-sodium beef broth
  • 1 cup dry red wine
  • 3 sprigs fresh thyme
  • 1 baguette, sliced
  • 1 cup grated Gruyère cheese

Instructions

  1. Brown the beef short ribs in a large pot with oil over medium-high heat until all sides are golden.
  2. Remove the ribs and caramelize the onions in the same pot for about 20–25 minutes until soft and sweet.
  3. Add minced garlic to the onions during the last minute, then deglaze with red wine.
  4. Return short ribs to the pot and add beef broth and thyme. Bring to a boil, reduce heat, cover, and simmer for about two hours until meat is tender.
  5. Toast baguette slices under a broiler until golden.
  6. Serve soup over toasted baguette topped with grated Gruyère cheese under the broiler until bubbly.
