  • 2 cups fresh clams, chopped
  • 4 slices thick-cut bacon, diced
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups diced Yukon gold potatoes
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • Salt and pepper to taste
  • ½ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to broil on high heat.
  2. In a large pot over medium heat, cook diced bacon until crispy. Remove bacon but retain drippings.
  3. Sauté chopped onion in bacon fat until soft (about 5 minutes). Add minced garlic and cook until fragrant (about 1 minute).
  4. Stir in diced potatoes and clams. Add thyme, salt, pepper, and 2 cups of water. Bring to boil; reduce heat and simmer for about 20 minutes until potatoes are tender.
  5. Stir in heavy cream and return crispy bacon to the pot; let simmer gently for another 5 minutes.
  6. Transfer chowder to an oven-safe dish. Mix panko breadcrumbs with Parmesan cheese and sprinkle evenly over the top.
  7. Broil for about 3-5 minutes until golden brown. Serve hot.
