Ingredients

Scale
  • 23 boneless, skinless chicken breasts (about 1 pound)
  • 1 cup BBQ sauce (store-bought or homemade)
  • 1 lb pizza dough (store-bought or homemade)
  • 2 cups shredded mozzarella cheese
  • 1 medium red onion, thinly sliced
  • ¼ cup fresh cilantro or green onions (for garnish)

Instructions

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while it heats.
  2. In a skillet over medium heat, cook the seasoned chicken breasts in olive oil for 6-7 minutes per side until golden brown. Let them cool before shredding.
  3. Shred the chicken and mix with ½ cup of BBQ sauce until well-coated.
  4. Roll out the pizza dough on floured parchment paper to about a quarter-inch thickness.
  5. Spread another ½ cup of BBQ sauce over the dough, then layer with mozzarella cheese, shredded chicken, and red onions.
  6. Transfer the pizza to the preheated stone or baking sheet and bake for 12-15 minutes until crust is golden and cheese is bubbling.
