  • 2 slices sourdough or whole grain bread
  • 4 strips thick-cut bacon
  • 2 large eggs
  • 1 ripe avocado (about 150g)
  • Salt to taste
  • Pepper to taste
  • 1 tsp lemon juice

Instructions

  1. Cook bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels to drain excess grease.
  2. In the same skillet, toast the bread in the leftover bacon grease until golden brown.
  3. While the bread is toasting, slice and mash the avocado in a bowl with salt, pepper, and lemon juice.
  4. Cook eggs in the skillet or in a separate pan according to preference (fried or poached).
  5. Spread mashed avocado on each slice of toasted bread, top with crispy bacon, followed by the egg.
  6. Season with additional salt and pepper if desired. Serve immediately.
